This e-book contains recipes for fillings for my interpretations of three different summer desserts - as a chocolate bonbon:
Blueberry Tart
Intense blueberry compote with a - at the same time - firm and creamy coffee ganache and a layer of cocoa shortcrust crunch.
Rhubarb Trifle
Firm and sour/sweet rhubarb compote with vanilla ganache and a layer of a macaron-based filling.
Strawberry Cake
The most delicious strawberry caramel with both a layer of chocolate ganache and a creamy mazarin ganache.
Each of the three chocolate bonbons contains three different fillings.
The three summer dessert bonbons are bursting with flavour - both from the blueberries/rhubarb/strawberries (you can use frozen or fresh) which are included in the first layer of each of the chocolate bonbons and from the other delicious fillings, including the tasty and velvety ganache, cocoa shortcrust pastry crunch and macaron base.
The shelf life of the three chocolate bonbons is a minimum of 45 days (stored at 16-18°C or cooler).
NB:
The e-book "SUMMER DESSERTS - in a chocolate bonbon" does not contain instructions for tempering coloured cocoa butter and chocolate.
